Position Purpose:

This position leads inmate workers in food service operations at the Department of Corrections (DOC) State Correctional Institution (SCI) Albion.

Description of Duties:
Describe in detail the duties and responsibilities assigned to this position. Descriptions should include the major end result of the task. Example: Types correspondence, reports, and other various documents from handwritten drafts for review and signature of the supervisor.

60% Conducts food service work and provides instruction to inmates through on-the job vocational training. Instructs inmates in food preparation, production, service, and baking. Instructs inmates in safe and sanitary operation of tools and equipment, cleaning, maintenance, and storage practices. Instructs inmates in the preparation of meals according to recipe, and ensures that meals are prepared and served in a timely manner.

20% Inspects food service areas, equipment, and food to ensure conformance with established safety and sanitation standards. Reviews census and menu data; adjusts recipes accordingly; and recycles leftover food into useable food products to reduce waste. Requisitions, receives, and stores food and supplies in assigned work areas, and ensures that first-in, first-out procedures are strictly followed.

15% Plans and reviews inmate work assignments. Conducts performance evaluations of inmate workers, and maintains all inmate worker records. Maintains care, custody, and control over inmates during work assignments.

5% Performs other related duties as assigned.


ESSENTIAL FUNCTIONS:

3. Instruct and oversee inmates in the standard principles and practices of food service operations
4. Reach, bend, stoop, pull, push, kneel, lift, climb, and grasp
5. Be mobile over all types of physical surfaces and levels
6. Spend prolonged periods of time standing or walking
7. Work all shifts and posts as required by operational necessities and emergencies
8. Work mandatory overtime in compliance with provisions of the Collective Bargaining Agreement, with little or no advance notice, whether on or off duty at the time of notification
9. Maintain regular and reliable attendance
10. Use and maintain various equipment and tools used in food service operations
11. Operate basic office equipment
12. Properly wear all portions of assigned uniform
13. Effectively communicate verbally and in writing
14. Establish and maintain effective working relationships
15. Hear and identify sounds (voices, whistle, buzzer, lock release, scuffling, sudden quiet)
16. Visually observe inmates’ activities
17. Administer emergency medical assistance to inmates and staff
18. Attend and participate in all mandatory training and/or testing
19. Travel as required
